H. Valley is the culmination of Chef Austin Johnson's life in restaurants, farms, and communities. His cooking journey took him from New York to Frenchie in Paris and London, where he earned his first Michelin star and, just as importantly, developed a lasting connection to French markets, produce, and the simple beauty of cooking with exceptional ingredients. That experience shaped his belief that great food does not need to feel formal—it begins with the land, the people who grow it, and the care taken in bringing it to the table.

Back in New York, Austin brought that philosophy to One White Street, earning a Michelin star and later a Michelin Green Star for its commitment to thoughtful, sustainable cooking. He also operated Rigor Hill Farm in the Hudson Valley, working directly with the land and experiencing firsthand the dedication required to grow remarkable food. That relationship between farm and kitchen became the foundation for Rigor Hill Market, a beloved neighborhood gathering place built around seasonal cooking, genuine hospitality, and a strong sense of community.

H. Valley brings all of those experiences together under one roof.
